This easy Buckeye recipe features creamy, sweet peanut butter balls dipped in rich melted chocolate, leaving a little peanut butter showing on top. These classic Ohio treats are no-bake, delicious, and perfect for holidays, parties, or homemade gifts.

Ingredients

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 1/2 cups powdered sugar, sifted
  • 2 cups semisweet chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening (optional, for smoother dipping)

Instructions

  1. In a large mixing bowl, beat the creamy peanut butter and softened butter together until smooth and creamy.
  2. Add the vanilla extract and mix until combined.
  3. Gradually add the powdered sugar, mixing until a thick, smooth dough forms that is firm enough to roll into balls.
  4. Line a baking sheet with parchment paper. Scoop about 1 tablespoon of peanut butter mixture and roll it between your palms to form a smooth ball. Repeat with the remaining mixture.
  5. Place the peanut butter balls on the prepared baking sheet and refrigerate for 30 minutes, or until firm.
  6. Combine the semisweet chocolate chips and coconut oil, if using, in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each interval, until completely melted and smooth.
  7. Insert a toothpick into the center of each chilled peanut butter ball. Dip it into the melted chocolate, leaving a small circle of peanut butter visible at the top to create the classic Buckeye appearance.
  8. Allow excess chocolate to drip off, then return each dipped ball to the parchment-lined baking sheet. Carefully remove the toothpick and smooth over the hole with your fingertip.
  9. Refrigerate the Buckeyes for 15 to 20 minutes, or until the chocolate coating is completely set.
  10. Serve chilled or allow them to sit at room temperature for a few minutes before enjoying.

Notes

  • Use regular creamy peanut butter, such as Jif or Skippy, for the best consistency. Natural peanut butter may produce a softer or oily filling.
  • If the peanut butter mixture feels too sticky to roll, add a little more powdered sugar until it becomes manageable.
  • Chilling the peanut butter balls before dipping helps them hold their shape and prevents them from falling apart in the warm chocolate.
  • For a richer chocolate flavor, substitute dark chocolate chips for semisweet chocolate chips.
  • Use a toothpick or wooden skewer for easy dipping, and leave a small circle of peanut butter exposed to resemble a buckeye nut.
  • Store Buckeyes in an airtight container in the refrigerator for up to 2 weeks.
  • For longer storage, freeze in a freezer-safe container for up to 3 months. Thaw in the refrigerator before serving.
  • These no-bake peanut butter treats are perfect for Christmas cookie trays, holiday parties, potlucks, and edible gifts.
