Easy Cherry Cobbler combines sweet, juicy cherries with a tender, golden topping for a warm and comforting homemade dessert. Serve it warm with vanilla ice cream or whipped cream.

Ingredients

  • Cherry pie filling
  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Salt
  • Milk
  • Unsalted butter
  • Vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the butter in a baking dish and set it in the oven for a few minutes, just until completely melted.
  3. In a medium mixing bowl, combine the flour, sugar, baking powder, and salt.
  4. Add the milk and vanilla extract and stir gently until the batter is smooth and no large lumps remain.
  5. Carefully remove the baking dish from the oven. Pour the batter evenly over the melted butter without stirring.
  6. Spoon the cherry pie filling evenly over the batter. Do not stir; the batter will rise around the cherries as it bakes.
  7. Bake for 40 to 45 minutes, or until the top is golden brown and the cherry filling is bubbling around the edges.
  8. Remove from the oven and cool for 10 to 15 minutes before serving.

Notes

  • For fresh cherries, use pitted cherries mixed with sugar and a small amount of cornstarch in place of canned cherry pie filling.
  • Frozen cherries can be used after thawing and draining excess liquid.
  • Add a small amount of almond extract to the cherries or a pinch of cinnamon to the batter for extra flavor.
  • For extra crunch, sprinkle coarse sugar, sliced almonds, or chopped pecans over the cobbler before baking.
  • Cherries can be combined with blueberries, raspberries, peaches, or blackberries for a mixed-fruit cobbler.
  • Store cooled leftovers covered in the refrigerator for up to 4 days.
  • Reheat individual servings in the microwave for 20 to 30 seconds at a time, or warm larger portions covered loosely with foil in a 325°F oven for 10 to 15 minutes.
  • Freeze well-wrapped portions for up to 2 months and thaw overnight in the refrigerator before reheating.
  • Serve warm with vanilla ice cream, whipped cream, or a dusting of powdered sugar.
