A simple and flavorful chicken marinade that makes juicy, tender chicken every time using pantry staples. Perfect for grilling, baking, or pan-cooking.

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 1/2 pounds chicken (breasts or thighs)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, soy sauce, Dijon mustard, honey, oregano, paprika, salt, and pepper until well combined.
  2. Place the chicken in a resealable bag or shallow dish and pour the marinade over it.
  3. Ensure the chicken is fully coated, then cover and refrigerate for at least 30 minutes, preferably 2 to 8 hours.
  4. Remove the chicken from the marinade and discard excess marinade.
  5. Cook the chicken by grilling, baking at 400°F (200°C) for 20–25 minutes, or pan-cooking until fully cooked and internal temperature reaches 165°F (75°C).
  6. Let rest for a few minutes before serving.

Notes

  • Marinate longer for deeper flavor, but avoid exceeding 24 hours.
  • Works well with chicken breasts, thighs, or drumsticks.
  • You can substitute lime juice for lemon juice.
  • Add chili flakes for a spicy variation.
  • Store leftover cooked chicken in the refrigerator for up to 3 days.
