These easy crab salad sandwiches are creamy, flavorful, and perfect for lunch, brunch, or casual gatherings. Served on buttery mini croissants, they come together in just minutes.

Ingredients

  • 12 ounces lump crab meat (two cans)
  • 1/2 cup mayonnaise
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon lemon juice
  • 1 stalk celery, finely chopped
  • 1/2 tablespoon fresh parsley, finely chopped
  • Salt and pepper, to taste
  • 8 mini croissants

Instructions

  1. In a medium bowl, stir together the crab meat, mayonnaise, Old Bay seasoning, lemon juice, chopped celery, and parsley until well combined.
  2. Season the mixture with salt and pepper to taste.
  3. Cut each mini croissant in half lengthwise.
  4. Spoon or spread the crab salad onto the bottom half of each croissant and top with the other half before serving.

Notes

  • Chill the crab salad for 15–20 minutes before serving for even better flavor.
  • Mini brioche buns or sandwich rolls can be substituted for croissants.
  • Store leftover crab salad in an airtight container in the refrigerator for up to 2 days.
