Ingredients
2 eggs
1 1/2 cup milk
1/2 cup vegetable oil
2 tsp vanilla
1 cup pumpkin puree (not pumpkin pie mix)
2 cups flour
1/2 cup sugar
1/4 cup cornstarch
1 tbsp baking powder
1/2 tsp salt
2 1/4 tsp pumpkin pie spice
Instructions
Preheat your waffle iron.
Combine the wet ingredients in a medium-sized mixing bowl: eggs, milk, oil, vanilla extract, and pumpkin puree.
