This Easy Mandarin Orange Jello Salad is a creamy, fluffy dessert salad packed with juicy mandarin oranges, marshmallows, and coconut. Perfect for potlucks, holidays, or a refreshing make-ahead treat.

Ingredients

  • 1 box orange gelatin (3-oz box)
  • 1.5 cups water, divided
  • 1 box instant vanilla pudding mix (3.4-oz box)
  • 1 tub whipped topping (8-oz tub)
  • 1 can mandarin oranges (29-oz can), drained
  • 2 cups mini marshmallows
  • 1/2 cup coconut flakes

Instructions

  1. Set aside a small amount of the mandarin oranges, marshmallows, and coconut flakes for topping before serving.
  2. Bring 1 cup of water to a boil.
  3. Add the orange gelatin powder to a large mixing bowl. Slowly pour in the boiling water and whisk for 1 minute until fully dissolved. Whisk in 1/2 cup cold water and refrigerate for 15 minutes.
  4. Remove the bowl from the refrigerator, whisk in the vanilla pudding mix, and return to the refrigerator for another 15 minutes until slightly thickened.
  5. Fold in the whipped topping until smooth and combined.
  6. Gently stir in the mandarin oranges, mini marshmallows, and coconut flakes without overmixing.
  7. Transfer the mixture to a serving dish and top with the reserved mandarins, marshmallows, and coconut flakes.
  8. Cover and refrigerate for at least 2 hours before serving to allow the salad to fully set.

Notes

  • Drain the mandarin oranges well to avoid excess liquid in the salad.
  • For extra texture, add chopped pecans or walnuts.
  • Store covered in the refrigerator for up to 3 days.
  • This dessert is best served chilled.
