Ingredients
300 g Boursin cheese or soft goat cheese
35 g sun-dried tomato, finely chopped
20 g red onion, chopped
15 g pistachios, chopped
20 g black olives, chopped
15 g capers, chopped
2 tbsp parsley, finely chopped
Honey, for drizzling
Instructions
Place a sheet of plastic wrap on a work surface and transfer the cheese to the center. Wrap and shape it into a log, then refrigerate for 30–40 minutes or freeze for 10 minutes until firm.
In a small bowl, combine the sun-dried tomato, red onion, pistachios, olives, capers, and parsley.
Spread the mixture evenly over a clean chopping board or plate.
Unwrap the chilled cheese log and gently roll it in the mixture, pressing lightly so the coating adheres evenly, including the ends.
Reshape the log if needed and drizzle generously with honey or hot honey before serving.
Refrigerate until ready to serve.
Notes
Serve with crackers, crostini, or fresh vegetables.
Hot honey adds a sweet and spicy finish.
The cheese log can be made up to 2 days ahead and refrigerated.
