This easy roast turkey recipe delivers a juicy, tender bird with crisp golden skin. Perfect for holiday gatherings and festive family meals.

Ingredients

  • 1 turkey (approx 4.5 kg/10 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 240 ml (1 cup) chicken stock

Instructions

  1. Preheat the oven to 160C Fan/180C/350F/Gas Mark 4.
  2. Remove the giblets and neck, tuck the tips of the legs into the cavity, and tuck the wing tips underneath the bird.
  3. Place the turkey on a large wire rack set over a roasting tray.
  4. Rub the olive oil all over the turkey and season with salt and black pepper.
  5. Pour the chicken stock into the base of the roasting tray.
  6. Lightly oil a large sheet of foil and tent it over the turkey and tray without touching the bird, sealing any gaps.
  7. Roast the turkey for 2 hours.
  8. Remove the foil and continue roasting for 1 additional hour, or until golden brown and cooked through.
  9. Transfer the turkey to a warm serving platter.
  10. Allow the turkey to rest for 30 to 60 minutes before carving.
  11. If resting longer than 60 minutes, loosely tent with foil, leaving space above the skin to prevent sogginess.
  12. Use the roasting juices to make gravy.
  13. Carve and serve with your favorite holiday side dishes.
