Ingredients
1 1/2 pounds skinless, boneless chicken breasts
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
1 can Italian-style diced tomatoes
2 cups chicken broth
1 cup orzo pasta
2 (5.2-ounce) packages garlic and herb Boursin cheese
5 ounces baby spinach
1 teaspoon lemon juice (optional)
Instructions
Place the chicken breasts in the slow cooker and season with salt and pepper.
Top with the diced tomatoes and pour the chicken broth around the chicken.
Cover and cook on High for 2 hours or on Low for 4 hours, until the chicken is cooked through and tender.
Remove the chicken and cut it into bite-sized pieces. Return the chicken to the slow cooker.
Stir in the orzo pasta and Boursin cheese until well combined.
Cover and cook on High for 35 to 40 minutes, or until the orzo is tender and most of the liquid has been absorbed.
Stir in the baby spinach and cook until wilted.
Add lemon juice if desired and adjust seasoning with additional salt and pepper to taste.
Serve warm.
Notes
Add sliced mushrooms, zucchini, peas, or bell peppers for extra vegetables.
Chicken thighs can be substituted for chicken breasts for a richer flavor.
