Tender, juicy slow cooker shredded chicken seasoned with Italian herbs and cooked in savory broth. An easy, versatile protein for meal prep, sandwiches, salads, tacos, and more.

Ingredients

  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning*
  • ½ teaspoon garlic powder
  • ½ teaspoon pepper
  • 4 boneless skinless chicken breasts (23 pounds)
  • ¾ cup chicken broth (or water)

Instructions

  1. In a small bowl, stir together the salt, Italian seasoning, garlic powder, and pepper. Set aside.
  2. Place the chicken breasts in an even layer over the bottom of the slow cooker.
  3. Pour the chicken broth or water over the chicken breasts, then sprinkle the spice mixture evenly over the top.
  4. Cover and cook until the chicken reaches an internal temperature of at least 165°F, about 2-3 hours on high or 3-6 hours on low.
  5. Transfer the chicken to a cutting board and let it cool until easy to handle. Use two forks to shred the chicken, then return it to the cooking juices before serving.

Notes

  • Water can be used instead of chicken broth, although broth adds more flavor.
  • Cooking time can vary depending on the size and thickness of the chicken breasts and the slow cooker.
  • For juicy shredded chicken, return the shredded meat to the cooking juices and toss to coat.
