Ingredients
3 boneless skinless chicken breasts (flatten and roll or cut into 1-inch cubes)
10 tablespoons unsalted butter
2/3 cup seasoned breadcrumbs
1/3 cup Parmesan cheese (freshly grated)
1 tablespoon fresh parsley (chopped)
2 teaspoons lemon zest
3 garlic cloves (minced)
Salt and pepper, to taste
Instructions
Pound the chicken with a meat mallet to help it cook evenly, then cut into equal-sized pieces if needed.
Melt the butter in a small shallow dish.
In a separate bowl, combine the breadcrumbs, parsley, Parmesan cheese, lemon zest, garlic, salt, and pepper.
Coat the chicken with melted butter, then roll or toss it in the breadcrumb mixture until evenly covered.
For grilling, soak wooden skewers before using. Thread the chicken onto skewers, leaving about 1/8 to 1/4 inch between pieces.
Brush the grill grate with oil. Grill for 3 minutes on the first side, then about 2 minutes on each remaining side, until the chicken reaches an internal temperature of 165 F.
For stovetop cooking, heat a grill pan or cast iron pan over medium-high heat and lightly coat it with butter or cooking spray.
Cook the spiedini for 4 to 5 minutes per side, until golden and the chicken reaches an internal temperature of 165 F.
For oven cooking, preheat the oven to 400 F. Lightly grease a baking pan, arrange the prepared skewers on the pan, and lightly spray the tops with oil.
Bake for about 20 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
Notes
Wooden skewers should be soaked before grilling to help prevent burning.
Beef can be substituted for chicken and should be cooked to an internal temperature of at least 145 F.
Serve with salad, roasted vegetables, pasta, or lemon wedges.
