Ingredients
3 boneless skinless chicken breasts (flatten and roll or cut into 1-inch cubes)
10 tablespoons unsalted butter
⅔ cup seasoned breadcrumbs
⅓ cup parmesan cheese (freshly grated)
1 tablespoon parsley (fresh, chopped)
2 teaspoons lemon zest
3 garlic cloves (minced)
Instructions
Pound the chicken with a meat mallet to an even thickness, then cut into equal pieces.
Melt the butter in a small, shallow dish.
In a separate shallow bowl, combine the breadcrumbs, parsley, Parmesan, lemon zest, and minced garlic.
Coat each piece of chicken in melted butter, then roll or toss in the breadcrumb mixture until evenly coated.
For grilling, soak wooden skewers in water to prevent burning. Thread the chicken onto the skewers, leaving ⅛ to ¼ inch of space between pieces.
Brush the grill grate with oil. Grill for 3 minutes on the first side, then about 2 minutes on each of the remaining sides, until the chicken reaches an internal temperature of 165°F.
For stovetop cooking, heat a grill pan or cast iron pan over medium-high heat and coat with a thin layer of butter or cooking spray. Cook the skewers for 4–5 minutes per side until golden and the chicken reaches 165°F internally.
For oven cooking, preheat the oven to 400°F. Lightly grease a baking pan with butter or oil, arrange the prepared skewers on the pan, and lightly spritz the chicken with oil.
Bake for approximately 20 minutes, or until the chicken reaches 165°F internally and the breadcrumb coating is golden brown.
