Ingredients

  • 8 ounces thinly sliced deli turkey (preferably nitrate-free)
  • 68 slices cheese (cheddar, Swiss, or provolone; sharp cheddar recommended)
  • Fresh spinach leaves (optional)
  • Thinly sliced cucumbers (optional)
  • Thinly sliced bell peppers (optional)
  • Black pepper or smoked paprika (optional)
  • Soft tortilla wraps or large lettuce leaves for wrapping (optional)
  • Butter or olive oil for warming (optional)
  • 1/2 cup creamy ranch dressing (store-bought or homemade)
  • Optional homemade ranch: 1/2 cup mayonnaise
  • Optional homemade ranch: 1/4 cup sour cream
  • Optional homemade ranch: 1 teaspoon dried parsley
  • Optional homemade ranch: 1/2 teaspoon garlic powder
  • Optional homemade ranch: 1/2 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  1. Lay the turkey and cheese slices on a clean work surface. Wash and thinly slice any vegetables if using.
  2. Place one slice of turkey flat and top with one slice of cheese.
  3. Add spinach leaves or sliced cucumbers and bell peppers if desired.
  4. Roll the turkey and cheese tightly into a neat cylinder. Repeat with the remaining ingredients.
  5. For a warm version, heat a lightly buttered or oiled skillet over medium-low heat and cook the roll-ups for about 1 minute per side, or microwave for 15–20 seconds until the cheese begins to melt.
  6. If using store-bought ranch, pour it into a serving bowl. For homemade ranch, whisk together the mayonnaise, sour cream, parsley, garlic powder, onion powder, salt, and pepper until smooth. Chill if desired.
  7. Arrange the roll-ups on a serving platter with the ranch dip. Garnish with smoked paprika or fresh herbs if desired and serve.
