This quick and creamy vegan cheese sauce is made without nuts and comes together in just minutes. Perfect for pasta, nachos, vegetables, and dipping, it delivers rich cheesy flavor with simple pantry ingredients.

Ingredients

  • 12 oz (340 grams) silken or soft tofu
  • 1/2 cup (35 grams) nutritional yeast
  • 1 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika or chipotle powder
  • 2 teaspoons Dijon mustard
  • 1 tablespoon white wine vinegar
  • 1 teaspoon fine sea salt
  • About 1/2 cup (120 mls) unsweetened, unflavoured dairy-free milk

Instructions

  1. Add all of the ingredients to a blender, starting with half of the dairy-free milk. Blend until completely smooth.
  2. Add more milk as needed to reach your desired consistency. Taste and adjust seasoning if necessary.
  3. Warm the sauce gently in a saucepan over low heat before serving, or use it directly in your favorite recipes.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Use chipotle powder instead of smoked paprika for a spicier flavor.
  • This sauce thickens slightly as it heats.
  • Great for pasta, baked potatoes, nachos, or roasted vegetables.
