Egg Toast is a quick and savory breakfast made with bread slices coated in a flavorful egg mixture with onions, tomatoes, and herbs, then pan-fried until golden. It is crispy on the outside and soft inside, making it perfect for busy mornings.

Ingredients

  • 2 to 4 slices bread (depending on the size, prefer thick slices)
  • 2 large eggs
  • 1 tablespoon oil or unsalted butter
  • 1/4 teaspoon salt (adjust to taste)
  • 3 tablespoons onion or shallots or green onions, finely chopped
  • 3 tablespoons tomato, deseeded and chopped, or red bell peppers
  • 1 green chili, chopped (optional)
  • 1 1/2 tablespoons coriander leaves or 1 tablespoon parsley, chopped
  • 1 pinch turmeric (optional)
  • 1 pinch chili flakes or black pepper, adjust to taste

Instructions

  1. Break the eggs into a mixing bowl and whisk well with a fork.
  2. Add onions, chilies, tomatoes, and coriander leaves. Sprinkle turmeric, salt, and chili flakes, then whisk until frothy.
  3. Heat a pan with oil or butter over medium heat and spread evenly.
  4. Dip a bread slice into the egg mixture, coating both sides well.
  5. Place the coated bread onto the hot pan. Cook 2 to 3 slices at a time depending on pan size.
  6. Pour about 2 tablespoons of egg mixture on top of each bread slice and cook until the base is firm.
  7. Flip the bread slices and cook the other side while gently pressing with a spatula.
  8. If extra egg mixture remains, spoon some over the cooked toast and cook briefly until set.
  9. Serve hot or warm.
  10. For oven method, preheat oven to 380 F or 160 C for 15 minutes. Butter one side of the bread and place on a baking tray butter-side up.
  11. Pour a few tablespoons of egg mixture over each slice and bake on the middle rack for 14 minutes or until fully cooked.

Notes

  • Use thick bread slices to prevent sogginess.
  • Deseed the green chili for a milder flavor.
  • Whole wheat or multigrain bread can be used for added fiber.
  • Serve with ketchup, green chutney, or hot sauce.
  • Best enjoyed fresh and hot.
