Ingredients
1/3 cup butter
3 very ripe bananas
2 teaspoons Chinese Five Spice Powder
1 teaspoon baking soda
1 teaspoon kosher salt
3/4 cup sugar
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
Instructions
Preheat the oven to 350 degrees F. Butter a 4×8-inch loaf pan.
Melt the butter in a microwave in a large bowl.
Add the bananas and mash with a fork until broken down and fully combined with the butter.
Add the Chinese five spice powder, baking soda, salt, and sugar. Stir to combine.
Add the beaten egg and vanilla extract and stir until combined.
Add the flour and stir just until fully incorporated. Avoid overmixing.
Pour the batter into the prepared loaf pan and bake for 50 minutes to 1 hour, or until cooked through. Insert a wooden skewer into the center to test for doneness.
Remove from the oven and cool in the pan for 20 minutes before removing the loaf and slicing.
Notes
Use very ripe, heavily spotted bananas for the best sweetness and banana flavor.
Begin checking the loaf after 50 minutes; a wooden skewer inserted into the center should come out with only a few moist crumbs.
Allow the bread to cool before slicing for cleaner slices.
Store leftovers tightly covered at room temperature for up to 3 days.
