Frankenstein Rice Krispies Treats

Fun and festive Frankenstein Rice Krispies Treats made with gooey green marshmallow cereal bars, chocolate hair, candy eyes, and Tootsie Roll bolts. A playful Halloween dessert that’s easy to decorate.

Ingredients

  • 10 ounces large marshmallows (can use mini marshmallows)
  • 8 cups Rice Krispies cereal
  • 1/4 cup butter
  • 1/2 cup marshmallow fluff
  • 5–8 drops green food coloring
  • 1 cup dark chocolate chips
  • 1 tablespoon vegetable oil
  • 18 large candy eyes
  • 9 small Tootsie Rolls
  • 1/2 cup black or brown icing

Instructions

  1. In a large skillet, melt the butter over medium heat. Add the marshmallows and marshmallow fluff and stir constantly over medium-high heat until completely melted and smooth.
  2. Add 5-8 drops of green food coloring, adjusting the amount as needed to achieve your desired shade. Stir until evenly colored.
  3. Place the Rice Krispies cereal in a large bowl. Quickly add the melted marshmallow mixture and stir until the cereal is thoroughly coated. Work quickly because the mixture will begin to set as it cools.
  4. Press the Rice Krispies mixture evenly into a greased 9×13-inch baking dish.
  5. Refrigerate for at least 15 minutes, or until firm. Remove from the refrigerator and cut into nine approximately 3×4-inch rectangles.
  6. Combine the dark chocolate chips and vegetable oil in a small microwave-safe bowl, stirring to coat the chocolate. Microwave in 30-second intervals, stirring after each interval, until melted and smooth.
  7. Dip the top inch of each Rice Krispies treat into the melted chocolate to create Frankenstein’s hair. Place on a greased cooling rack or other non-stick surface until the chocolate firms up. Refrigerate briefly to speed up setting if desired.
  8. Use small dots of black or brown icing to attach two candy eyes to each treat. Use additional icing to draw a mouth below the eyes.
  9. Cut each Tootsie Roll in half. Use icing to attach one half to each side of the treats to create Frankenstein’s neck bolts.
  10. Allow the chocolate and icing to set, then serve and enjoy.

Notes

  • Mini marshmallows can be substituted for large marshmallows.
  • Use more or less green food coloring to achieve your preferred Frankenstein color.
  • Work quickly when mixing the cereal with the marshmallow mixture because it thickens as it cools.
  • Do not overheat the chocolate or allow water to come into contact with it, as this can cause the chocolate to seize.
  • Refrigerating the decorated treats briefly can help the chocolate set faster.
