Ingredients
20 Oreo cookies (230 grams), regular-stuffed, filling intact
10 tablespoons (142 grams) unsalted butter, at room temperature
1 1/3 cups heavy cream, cold (for the filling)
4 teaspoons powdered sugar (for the filling)
1 cup heavy cream, cold (for the topping)
2 tablespoons powdered sugar (for the topping)
1 teaspoon vanilla extract (for the topping)
Chocolate shavings or cocoa powder, for optional garnish
Instructions
Preheat the oven to 350°F (175°C). Lightly spray a 9-inch deep pie dish with cooking spray.
Prepare the Oreo crust by placing the cookies, including their filling, into a food processor. Pulse until finely ground. Add the melted butter and pulse until the crumbs are evenly moistened.
Press the cookie mixture firmly into the bottom and up the sides of the prepared pie dish. Bake for 10 minutes, until fragrant and set. Transfer to a wire rack and allow to cool completely.
Prepare the chocolate filling by whisking together the granulated sugar and eggs in a small saucepan. Cook over medium-low heat, whisking constantly, until the mixture reaches 160°F (71°C) and coats the back of a metal spoon.
Remove the saucepan from the heat. Stir in the melted bittersweet chocolate and 2 teaspoons vanilla extract until completely smooth. Allow the mixture to cool to room temperature, approximately 75°F (24°C), stirring occasionally.
In a large mixing bowl, beat the room-temperature butter with an electric mixer for 2 to 3 minutes, until light and fluffy. Gradually add the cooled chocolate mixture, then beat on high speed for approximately 5 minutes, until fluffy and well combined.
In a separate clean bowl, whip 1 1/3 cups cold heavy cream until it begins to thicken. Add 4 teaspoons powdered sugar and continue beating until stiff peaks form.
Gently fold the whipped cream into the chocolate mixture until evenly incorporated, taking care not to deflate the filling.
Spoon the chocolate filling into the cooled Oreo crust and smooth the surface. Refrigerate for at least 6 hours, until thoroughly chilled and set.
Prepare the whipped cream topping by beating 1 cup cold heavy cream, 2 tablespoons powdered sugar, and 1 teaspoon vanilla extract with an electric mixer on high speed until stiff peaks form.
Spread or pipe the whipped cream over the chilled pie. Garnish with chocolate shavings or a light dusting of cocoa powder, if desired. Slice and serve chilled.
Notes
Use regular-stuffed Oreo cookies with the cream filling intact for the best crust texture.
Cook the egg and sugar mixture to 160°F (71°C) using a reliable food thermometer to ensure the eggs are properly heated.
Allow the chocolate mixture to cool to approximately 75°F (24°C) before adding it to the whipped butter. A warm mixture can melt the butter and affect the filling’s texture.
To speed up cooling, transfer the cooked chocolate mixture to a wide stainless-steel pan and stir occasionally.
Use room-temperature butter for the filling and very cold heavy cream for whipping to achieve the best consistency.
Fold the whipped cream into the chocolate filling gently to preserve its light, airy texture.
Refrigerate the pie for at least 6 hours before slicing. Overnight chilling is ideal for clean, neat slices.
The filled pie can be prepared up to 2 days ahead of time. Keep refrigerated and add the whipped cream topping before serving.
For clean slices, use a sharp knife dipped in hot water and wiped dry between cuts.
Store leftover pie covered in the refrigerator for up to 3 days.
