These fresh watermelon feta mint skewers are a light, refreshing appetizer finished with a simple honey drizzle. The sweet, salty, and herbal combination makes them perfect for quick entertaining or summer gatherings.

Ingredients

  • Watermelon: Fresh, seedless, cut into 1-inch cubes
  • Feta Cheese: Crumbly block feta, about 4 ounces, cut into cubes similar in size to watermelon
  • Fresh Mint Leaves: About 20 whole leaves, washed and patted dry
  • Honey: Raw or wildflower honey, about 2 tablespoons for drizzling
  • Optional: Fresh lime juice (1 teaspoon) for honey drizzle
  • Optional: Crushed black pepper for sprinkling

Instructions

  1. Rinse the watermelon and mint leaves under cold water and pat the mint dry. Cut the watermelon into 1-inch cubes and remove any seeds if needed. Cut the feta into cubes similar in size to the watermelon.
  2. Assemble the skewers by threading a watermelon cube, a folded mint leaf, and a feta cube onto each skewer. Repeat until the skewer is filled or reaches the desired length.
  3. In a small bowl, mix the honey with optional lime juice until well combined.
  4. Arrange skewers on a serving platter and drizzle with the honey mixture. Sprinkle with crushed black pepper if desired and serve immediately.

Notes

  • Best served chilled for maximum freshness and flavor contrast.
  • Use firm feta to prevent crumbling during assembly.
  • Mint leaves can be gently slapped between hands to release aroma before using.
  • Assemble shortly before serving to prevent watermelon from releasing excess liquid.
  • Add lime juice for a brighter, tangier finish.
