Feta Cheese: Crumbly block feta, about 4 ounces, cut into cubes similar in size to watermelon
Fresh Mint Leaves: About 20 whole leaves, washed and patted dry

Instructions
Rinse the watermelon and mint leaves under cold water and pat the mint dry. Cut the watermelon into 1-inch cubes and remove any seeds if needed. Cut the feta into cubes similar in size to the watermelon.
Assemble the skewers by threading a watermelon cube, a folded mint leaf, and a feta cube onto each skewer. Repeat until the skewer is filled or reaches the desired length.
In a small bowl, mix the honey with optional lime juice until well combined.
