This fresh peach salsa is bright, zesty, and lightly spicy with jalapeño, lime, and cilantro. It’s a quick no-cook recipe that works perfectly as a dip, topping, or side for summer meals.

Ingredients

  • 3 medium fresh peaches, diced (ripe but firm)
  • 1 jalapeño pepper, seeded and finely chopped (adjust to taste)
  • 1/4 cup fresh cilantro leaves, chopped (packed)
  • 1 small red onion, finely diced
  • Juice of 12 fresh limes
  • 1/2 teaspoon salt, to taste
  • Pinch of ground black pepper (optional)
  • 1 tablespoon extra virgin olive oil (optional)

Instructions

  1. Wash and rinse the peaches under cold water, then pat dry and dice into small 1/4-inch pieces.
  2. Slice the jalapeño in half lengthwise, remove seeds and membranes if less heat is desired, then finely chop.
  3. Finely dice the red onion and roughly chop the cilantro leaves.
  4. In a medium mixing bowl, combine the diced peaches, jalapeño, red onion, and cilantro.
  5. Add the lime juice, starting with one lime and adding more to taste.
  6. Add the salt and a pinch of black pepper, then drizzle in olive oil if using.
  7. Stir gently to combine all ingredients without crushing the peaches.
  8. Cover and let the salsa rest at room temperature for about 10 minutes to allow flavors to meld.
  9. Taste and adjust seasoning with additional salt, lime juice, or jalapeño if needed before serving.

Notes

  • Use ripe but firm peaches to prevent the salsa from becoming mushy.
  • Adjust jalapeño quantity based on your preferred spice level.
  • Best served fresh but can be stored in the refrigerator for up to 2 days.
