Crispy fried mozzarella features layers of melty cheese wrapped in a crunchy double coating of Panko breadcrumbs. Serve hot with your favorite dipping sauce or toppings.

Ingredients

  • 4 thin slices mozzarella cheese (not fresh)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup Panko breadcrumbs
  • Vegetable or avocado oil, for pan-frying
  • Salt, for seasoning

Instructions

  1. Brush one side of one slice of mozzarella cheese with water, then stack a second slice on top. Repeat the brushing and stacking until all four slices are sealed together.
  2. Add the flour to a shallow bowl.
  3. Whisk the eggs in a second shallow bowl.
  4. Add the Panko breadcrumbs to a third shallow bowl.
  5. Dredge the stacked cheese in the flour, coating it on all sides, then shake off any excess.
  6. Dip the cheese in the eggs, shaking off any excess, then coat it with the breadcrumbs. Repeat the egg and breadcrumb coating to create two layers.
  7. Add about 1/2 inch of oil to a skillet over medium heat. Line a plate with paper towels.
  8. Once the oil is hot, test it by dropping in a breadcrumb; it should sizzle immediately. Add the coated cheese and pan-fry until golden brown, about 1 minute. Flip once and cook for about 1 minute more.
  9. Transfer the fried mozzarella to the paper towel-lined plate and immediately season with salt.
  10. Serve immediately with your choice of toppings or dipping sauce.

Notes

  • Use low-moisture mozzarella rather than fresh mozzarella for the best results.
  • Double-coating the cheese helps prevent it from leaking while frying.
  • Make sure the oil is hot before adding the cheese so the coating becomes crisp quickly.
  • Serve immediately while the coating is crisp and the mozzarella is hot and melty.
