Ingredients
1 head cauliflower, cut into florets
1 tablespoon olive oil
1 clove garlic, smashed
1/4 cup grated Parmesan cheese
1 tablespoon reduced-fat cream cheese
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Instructions
Bring a large pot of water to a boil. Add the cauliflower florets and cook until tender, about 10 minutes.
Drain the cauliflower thoroughly and pat dry with paper towels to remove excess moisture.
Meanwhile, heat the olive oil in a small skillet over medium heat. Add the smashed garlic and cook until softened and fragrant, about 2 minutes. Remove from the heat.
Transfer half of the cooked cauliflower to a food processor and blend until smooth. Add the remaining cauliflower and continue processing until creamy.
Add the sauteed garlic, olive oil, Parmesan cheese, cream cheese, kosher salt, and black pepper. Process until smooth and well combined.
Taste and adjust the seasoning as needed. Transfer to a serving bowl and serve warm.
Notes
Drain cauliflower thoroughly to prevent a watery texture.
For extra creamy mashed cauliflower, blend in batches until completely smooth.
Use freshly grated Parmesan cheese for the best flavor.
Substitute full-fat cream cheese for a richer texture.
Roasted garlic can replace sauteed garlic for a deeper flavor.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat gently in the microwave or on the stovetop.
Serve with roasted chicken, grilled fish, steak, or vegetables.
