Ingredients
12 oz jumbo pasta shells
2 cups ricotta cheese
1 1/2 cups shredded mozzarella cheese, divided
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
4 cloves garlic, minced
1 egg
2 cups marinara sauce
1 tablespoon fresh parsley, chopped
1 teaspoon Italian seasoning
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C).
Cook jumbo shells according to package directions until al dente. Drain and set aside to cool.
In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
In a bowl, combine ricotta, 1 cup mozzarella, Parmesan, egg, sautéed garlic, parsley, Italian seasoning, salt, and pepper.
Spread 1 cup marinara sauce on the bottom of a baking dish.
Stuff each shell with the cheese mixture and place in the dish.
Pour remaining marinara sauce over the shells and sprinkle with remaining mozzarella.
Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until bubbly and golden.
Let cool slightly before serving.
Notes
You can substitute cottage cheese for ricotta if desired.
Add cooked spinach or ground meat for variation.
Store leftovers in the refrigerator for up to 3 days.
