Ingredients
1 Tbsp extra virgin olive oil (or butter)
1 cup white mushrooms or Crimini mushrooms (more or less to your liking)
1/8 tsp Kosher salt (or sea salt to taste)
2 slices bread (preferably crusty Italian bread, or 1 slice for open-faced)
2 pats butter
2 oz fresh mozzarella (or regular mozzarella, use as much as you like)
Instructions
Heat the olive oil or butter in a small sauté pan over medium-high heat.
Add the sliced mushrooms and sauté, turning occasionally, until evenly browned. Season with kosher salt and remove from the heat.
Butter one side of each slice of bread.
Place one slice of bread, butter-side down, on a nonstick skillet or griddle over medium heat.
Spread the sautéed mushrooms evenly over the bread.
Top with the mozzarella cheese, then place the second slice of bread on top with the buttered side facing up.
Cook until the bottom is golden brown, then carefully flip and cook until the second side is golden and the cheese is melted. Serve immediately.
For an open-faced version, place the cheese on a slice of bread and melt it under the broiler or in an air fryer. Top with the sautéed mushrooms, season with salt and pepper if desired, heat briefly to warm, and serve.
Notes
Use Crimini mushrooms for a deeper, earthier flavor.
Fresh mozzarella creates a creamier sandwich, while regular mozzarella melts more evenly.
Serve with soup or a simple green salad for a complete meal.
