These Grilled Chimichurri Chicken Thighs are juicy, flavorful, and coated with a vibrant herb sauce made with parsley, cilantro, mint, garlic, and olive oil. A quick grilling method creates perfectly charred chicken with a fresh, zesty finish.

Ingredients

  • 1/2 cup extra-virgin olive oil
  • 1½ tablespoons sherry wine vinegar (or red wine vinegar)
  • 1½ tablespoons fresh lemon juice, from 1 lemon
  • 2 cloves garlic, peeled and roughly chopped
  • 1 medium shallot, peeled and roughly chopped
  • 1¼ teaspoons salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon crushed red pepper flakes
  • 1½ cups gently packed fresh parsley
  • 1 cup gently packed fresh cilantro
  • 1/2 cup gently packed fresh mint
  • 2 lb boneless skinless chicken thighs
  • Lemon wedges, for serving (optional)

Instructions

  1. Make the chimichurri by combining the olive oil, vinegar, lemon juice, garlic, shallot, salt, pepper, red pepper flakes, parsley, cilantro, and mint in a food processor. Pulse until the herbs are finely chopped and the mixture is combined while maintaining some texture.
  2. Transfer half of the chimichurri, about 1/2 cup, to a large zip-top bag or bowl. Add the chicken thighs and toss until evenly coated. Cover and refrigerate for at least 4 hours or overnight.
  3. Preheat the grill to medium-high heat and lightly oil the grates. Remove the chicken from the marinade and allow excess marinade to drip off.
  4. Grill the chicken for 5 to 7 minutes per side, or until cooked through and nicely charred.
  5. Transfer the chicken to a platter and spoon the reserved chimichurri over the top or serve it on the side. Serve warm with lemon wedges if desired.

Notes

  • Chicken can be marinated overnight for deeper flavor.
  • Serve with extra chimichurri sauce for a stronger herb flavor.
  • Store leftover chicken and sauce separately in the refrigerator for up to 3 days.
  • Red wine vinegar can be used instead of sherry wine vinegar.
