Ingredients
12 sausages, 6 hot and 6 mild (about 1.3 lbs)
4 red peppers, sliced
4 green peppers, sliced
2 large onions, sliced
1 head garlic, whole cloves crushed
2 tbsp olive oil
3 tbsp butter
Salt and pepper
8 rolls
Instructions
Preheat the grill to 400-500°F with a cast iron pan set directly on the grill.
Add the olive oil to the hot cast iron pan, followed by the sliced red and green peppers, onions, and crushed garlic cloves. Season with salt and pepper, stir well, and close the grill.
Lightly coat the sausages with a little of the olive oil to help prevent sticking. Place the sausages directly on the grill. Stir the peppers and onions occasionally as they cook.
Turn the sausages every 3-4 minutes and grill until they reach an internal temperature of 160°F.
Remove the sausages from the grill and let them rest on a cutting board for 10 minutes. Continue stirring and cooking the peppers and onions.
Slice the rested sausages and add them to the cast iron pan with the peppers and onions. Stir well and cook for a few more minutes, until the peppers are softened.
Remove the pan from the grill. Add the butter and stir until completely melted and incorporated.
Serve the grilled sausage and peppers on their own or piled into rolls.
Notes
Use a combination of hot and mild Italian sausage, or choose all hot or all mild according to preference.
Cook sausage to an internal temperature of 160°F for safe serving.
Allowing the sausages to rest for 10 minutes before slicing helps retain their juices.
Serve without the rolls for a lower-carbohydrate option.
