A fresh and flavorful dish featuring grilled salmon paired with sweet nectarines and creamy goat cheese. Perfect for a light yet satisfying meal with a balance of savory and sweet.

Ingredients

  • 4 salmon fillets
  • 2 nectarines, halved and pitted
  • 2 ounces goat cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat a grill or grill pan over medium heat.
  2. Brush the salmon fillets and nectarines with olive oil and season with salt and pepper.
  3. Place the salmon skin-side down on the grill and cook for about 4–5 minutes per side, until cooked through.
  4. Grill the nectarines cut-side down for 2–3 minutes until lightly charred and softened.
  5. Transfer the salmon and nectarines to a serving plate.
  6. Drizzle honey over the salmon and nectarines, then sprinkle with crumbled goat cheese.
  7. Garnish with fresh basil leaves and serve immediately.

Notes

  • Use ripe but firm nectarines for best grilling results.
  • Peaches can be substituted for nectarines.
  • Serve with a light salad or grains for a complete meal.
  • If grilling outdoors, lightly oil the grates to prevent sticking.
