Cattle Drive Casserole is a hearty, family-friendly comfort food made with seasoned ground beef, beans, vegetables, a creamy cheese layer, and a golden biscuit topping. It’s an easy one-pan meal that’s perfect for weeknight dinners or potlucks.

Ingredients

  • 1 lb ground beef
  • 1 yellow onion, chopped
  • 2 poblano peppers, chopped
  • 3 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chiles
  • 1 can pinto beans, drained and rinsed
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can refrigerated biscuit dough
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Brown the ground beef in a large skillet over medium heat. Drain excess grease.
  3. Add the onion, poblano peppers, and garlic. Cook until softened.
  4. Stir in the taco seasoning, diced tomatoes with green chiles, and pinto beans. Simmer for several minutes.
  5. Spread the beef mixture evenly into the prepared baking dish.
  6. Mix the sour cream, cheddar cheese, and Monterey Jack cheese together, then spread evenly over the beef mixture.
  7. Arrange the refrigerated biscuit dough evenly over the top.
  8. Bake for about 35 minutes, or until the biscuits are golden brown and the casserole is bubbling around the edges.
  9. Let the casserole rest for 10 minutes before serving. Garnish with chopped cilantro if desired.

Notes

  • Ground turkey or chicken can be substituted for the beef.
  • Black beans or kidney beans work well in place of pinto beans.
  • Add corn, jalapeños, mushrooms, zucchini, or bell peppers for extra flavor and texture.
  • Pepper Jack or Colby Jack cheese can be used instead of Monterey Jack.
  • Plain Greek yogurt may be substituted for sour cream.
  • Assemble the casserole without the biscuits up to 24 hours ahead; add biscuits just before baking.
