Healthy Almond Pistachio Frozen Yogurt

A creamy and naturally sweet frozen yogurt made with bananas, pistachios, and a hint of almond, blended with greens for a nutritious dessert.

Ingredients

  • 1 1/2 cups unsweetened coconut yogurt (or 0% fat plain Greek yogurt for dairy option)
  • 2 medium bananas, frozen into chunks
  • 2 small nuggets frozen spinach (30g) OR 1 cup raw spinach
  • 1/2 medium avocado
  • 1/4 cup raw honey
  • 3/4 teaspoon pure almond extract
  • 1/4 teaspoon xanthan gum (optional)
  • 4 tablespoons shelled raw pistachios, divided (2 tablespoons whole, 2 tablespoons crushed)

Instructions

  1. In a high speed blender or food processor, blend together yogurt, frozen banana, spinach, avocado, honey, almond extract, xanthan gum, and 2 tablespoons of the pistachios until completely smooth and thick.
  2. Line a loaf pan with parchment paper and pour the mixture into the pan.
  3. Smooth the top with a spatula, then sprinkle with the remaining 2 tablespoons crushed pistachios.
  4. Optional: Transfer the mixture to an ice cream maker and churn according to manufacturer’s instructions.
  5. Place the loaf pan in the freezer and freeze for 3–4 hours or until firm enough to scoop.
  6. Scoop and serve.

Notes

  • Use Greek yogurt for a higher-protein dairy version.
  • Xanthan gum helps improve texture but can be omitted.
  • Let sit at room temperature for a few minutes before scooping if too firm.
  • Store in an airtight container in the freezer for up to 1 week.
  • Spinach adds nutrients without affecting flavor significantly.
