Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond flour (or whole wheat flour)
  • 1/4 cup chia seeds or flax seeds
  • 1/4 cup honey or maple syrup
  • 1/2 cup mashed banana (or applesauce)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup almond butter (or peanut butter)
  • 1/4 cup dried fruit (raisins, cranberries, or chopped dates)
  • 1/4 cup nuts (almonds, walnuts, or cashews)
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, almond flour, chia seeds, cinnamon, and salt.
  3. In a separate bowl, mix together the mashed banana, almond butter, and honey or maple syrup.
  4. Add the wet ingredients to the dry ingredients and stir until combined. If the dough is too dry, add a little water or more banana.
  5. Gently fold in the dried fruit, nuts, and chocolate chips (if using).
  6. Scoop tablespoon-sized portions of the dough and place them on the prepared baking sheet, pressing them slightly to form cookie shapes.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Allow the cookies to cool completely before serving.

Notes

  • For a vegan version, substitute honey with maple syrup or agave nectar.
