Soft and wholesome sugar cookies made with whole wheat flour, applesauce, and coconut or cane sugar. These lightly sweet cookies are perfect for cutting into shapes and decorating.

Ingredients

  • 1/2 cup coconut sugar or cane sugar
  • 1/2 cup unsweetened apple sauce
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt

Instructions

  1. Combine the coconut sugar and apple sauce in a large mixing bowl. Stir until thoroughly combined.
  2. Add the egg and vanilla to the bowl and stir until combined.
  3. Mix the flour, baking powder, and salt in a small bowl until combined.
  4. Pour the flour mixture into the wet mixture and stir until fully combined.
  5. Chill the dough in the refrigerator for 1 hour.
  6. Preheat the oven to 350 degrees F.
  7. Dust a clean surface with flour and roll the dough to 1/2-inch thickness. Cut into shapes as desired.
  8. Place the cookies on a parchment-lined baking sheet and bake for 10 to 12 minutes, until golden brown.
  9. Allow the cookies to cool on the baking sheet for 2 to 3 minutes before transferring them to a wire rack to cool completely.
  10. Decorate as desired with icing or sprinkles.

Notes

  • Coconut sugar gives the cookies a slightly deeper, caramel-like flavor, while cane sugar provides a more traditional sugar cookie taste.
  • Chilling the dough for the full hour makes it easier to roll and cut into shapes.
  • Icing and sprinkles are optional and will increase the sugar and calorie content.
  • Store cooled cookies in an airtight container at room temperature.
