Ingredients
1 tablespoon (8g) cornstarch
2 teaspoons cold water
1 cup (200g) granulated sugar
¾ cup filtered water
1 cup fresh blueberries
2 tablespoons butter (salted or unsalted is fine)
1 teaspoon lemon juice (preferably fresh)
1 teaspoon grated lemon zest (optional)
1 pinch salt
½ cup fresh blueberries (optional for mixing into syrup)
Instructions
In a small bowl, stir together the cornstarch and 2 teaspoons cold water to make a slurry. Set aside.
In a small saucepan, combine the sugar and ¾ cup water. Cook over medium-high heat, stirring constantly, until the mixture comes to a boil and the sugar is completely dissolved, about 4-5 minutes.
Stir in 1 cup blueberries and the cornstarch slurry. Bring to a simmer, then reduce the heat to maintain a gentle simmer.
Simmer for 10-15 minutes, until the syrup has reduced and slightly thickened. It should thickly coat the back of a spoon.
Remove from the heat and stir in the butter, lemon juice, optional lemon zest, and salt.
For a completely smooth syrup, strain the mixture. For a chunkier blueberry sauce, stir in the optional additional ½ cup fresh blueberries.
Let the syrup cool for 10-15 minutes before serving.
Serve over pancakes, waffles, French toast, desserts, or your favorite dish.
Notes
The cornstarch slurry helps create a thicker syrup consistency.
Strain the finished syrup for a smooth texture or add extra fresh blueberries for a chunkier sauce.
Fresh lemon zest is optional but adds extra citrus flavor.
