Homemade Freezer Pizza Dough

This homemade freezer pizza dough is easy to prepare and perfect for make-ahead meals, yielding a soft, chewy crust every time. Ideal for fresh baking or freezing for later use.

Ingredients

  • 2 1/2 tsp active dry yeast
  • 2 tsp granulated sugar
  • 1 1/2 cups warm water (110°F)
  • 3 tbsp olive oil
  • 1 1/2 tsp salt
  • 3 1/2 cups unbleached all-purpose flour (17.5 oz)

Instructions

  1. Combine yeast, sugar, and warm water in a stand mixer bowl with a dough hook.
  2. Mix on low for 30 seconds, then let sit 5–10 minutes until bubbly.
  3. Add olive oil, salt, and flour. Mix on low until combined, then knead on high for 5 minutes, adding up to 1/2 cup more flour if needed until slightly sticky.
  4. Transfer dough to a greased bowl, turning to coat. Cover and let rise in a warm place for 45 minutes until doubled.
  5. Preheat oven with a pizza stone at 500°F for 30 minutes.
  6. Stretch or roll dough into a 12–14 inch circle and place on parchment. Prick with a fork.
  7. Add sauce, cheese, and toppings as desired.
  8. Slide onto the pizza stone and bake for 8–10 minutes until golden and bubbly. Cool for 5 minutes before serving.

Notes

  • For freezing unrisen dough: Divide dough, coat with olive oil, seal in freezer bags, and freeze up to 3 months. Thaw 2–3 hours before use.
  • For par-baked pizzas: Bake rolled dough at 425°F for 3–5 minutes, cool, top, then freeze until solid before wrapping.
  • Label frozen pizzas with baking instructions for convenience.
  • Bake frozen pizzas at 425°F for 13–20 minutes until fully cooked.
