Homemade Pub Cheese

A creamy, savory homemade pub cheese spread made with sharp cheddar, cream cheese, beer, mustard and smoky spices. Perfect for serving with crackers, fresh vegetables or soft pretzels.

Ingredients

  • 8 oz. sharp cheddar cheese (in block form)
  • 4 oz. cream cheese, at room temp
  • 3 Tablespoons amber ale or lager beer
  • 1 Tablespoon Worcestershire sauce
  • 2 teaspoons whole-grain mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Chopped fresh chives, for garnishing
  • Crackers, veggies or soft pretzels, for serving

Instructions

  1. In a food processor fitted with the shredding attachment, add the cubed cheddar cheese and process until shredded. Alternatively, shred the cheese using a box grater.
  2. Remove the shredding attachment, then add the cream cheese, beer, Worcestershire sauce, whole-grain mustard, garlic powder, smoked paprika and cayenne pepper to the bowl of the food processor.
  3. Process until smooth, creamy and mousse-like, about 2 minutes.
  4. Taste and season as needed with salt or additional cayenne pepper. Garnish with chopped fresh chives and serve immediately with crackers, vegetables or soft pretzels.

Notes

  • For extra heat, add additional cayenne pepper to taste.
  • Either amber ale or lager works well in this recipe.
  • Store leftover pub cheese in an airtight container in the refrigerator until ready to serve.
  • Serve with crackers, fresh vegetables or warm soft pretzels.
