Crispy, golden, and satisfyingly salty, these Homestyle Potato Chips are made with just three simple ingredients. They’re quick and easy to prepare, customizable, and naturally gluten-free and vegan.

Ingredients

  • 2 large russet potatoes
  • Salt, to taste
  • Vegetable oil (or any neutral oil) for frying

Instructions

  1. Wash and optionally peel the potatoes based on your preference.
  2. Slice the potatoes very thin (about 1/16 inch) using a mandoline or sharp knife.
  3. Rinse the slices under cold water until the water runs clear to remove excess starch.
  4. Thoroughly pat the slices dry using paper towels or a clean kitchen towel.
  5. Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
  6. Fry the potato slices in batches, ensuring not to overcrowd the pot.
  7. Cook for 3–5 minutes per batch, or until golden brown and crispy.
  8. Remove with a slotted spoon and drain on paper towels.
  9. While still hot, season with salt or your preferred seasonings.
  10. Let cool slightly before serving to maximize crunch.

Notes

  • Use a mandoline for consistent thin slices.
  • Don’t skip rinsing and drying the slices to ensure crispiness.
  • Customize with seasonings like paprika, garlic powder, or vinegar.
  • To bake, cook at 400°F (200°C) for 20–25 minutes, flipping halfway.
  • Store chips in an airtight container with a paper towel to absorb moisture.
  • To reheat, bake at 300°F (150°C) for 5–7 minutes.
