2 pounds carrots
1 tablespoon olive oil
¼ teaspoon salt
2 tablespoons honey
1 tablespoon (14g) salted butter
1 teaspoon balsamic vinegar (optional)
Instructions
Preheat the oven to 425°F. Peel and trim the tops from the carrots, then slice them into 2-inch chunks. For larger carrots, slice the thick upper part in half lengthwise before cutting into chunks.
Transfer the carrots to a rimmed baking sheet and toss with the olive oil and salt until well coated. Arrange the carrots in a single layer.
Bake for 30 to 35 minutes, tossing once halfway through, until the carrots are caramelized around the edges and fork-tender.
Combine the honey and butter in a small microwave-safe bowl. Microwave for 20 to 30 seconds, until the honey begins to bubble and the butter melts. Carefully remove from the microwave, add the balsamic vinegar if using, and stir until well combined.
Pour the honey mixture over the hot roasted carrots and toss until evenly coated. Serve warm.
