These Hot Cocoa Cookies are rich, soft, and chewy with crisp edges, capturing the comforting flavor of a warm cup of hot chocolate. Loaded with chocolate and optional gooey marshmallows, they’re perfect for holidays, gifting, or cozy everyday baking.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup hot cocoa mix
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups chocolate chips or chopped chocolate
  • 1 cup mini marshmallows or marshmallow bits (optional)
  • Optional toppings: chocolate wafers, crushed peppermint, or sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, hot cocoa mix, baking soda, baking powder, and salt.
  3. In a large bowl, cream the butter with the granulated sugar and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the chocolate chips and marshmallow bits, if using.
  7. Scoop portions of dough onto the prepared baking sheets, leaving space between each cookie.
  8. Bake for about 10 minutes, until the edges are set and the centers remain soft.
  9. If desired, add extra marshmallows or chocolate to the tops during the final few minutes of baking.
  10. Cool the cookies on the baking sheet for several minutes before transferring to a wire rack.
