This Instant Pot Chicken Dumpling Soup is a comforting one-pot meal with tender chicken, vegetables, and fluffy dumplings in a savory broth. It comes together quickly for a cozy family dinner.

Ingredients

  • 2 tablespoons butter
  • 2 stalks celery (diced)
  • 1/2 whole large onion (diced)
  • 4 boneless skinless chicken breasts (cut into 1 inch pieces)
  • 1 bag (12 oz mixed frozen vegetables)
  • 1 teaspoon poultry seasoning
  • 1 1/2 teaspoon kosher salt
  • 1 teaspoon dried basil
  • 1 pinch cayenne pepper
  • 4 cups chicken broth
  • 2 1/4 cups baking mix (like bisquick)
  • 2/3 cup milk

Instructions

  1. Set the Instant Pot to Saute and cook the onion and celery in the butter until translucent.
  2. Add the chicken, poultry seasoning, salt, basil, and cayenne pepper to the pot and stir to combine. Top with the frozen vegetables and chicken broth. Bring to a boil.
  3. In a medium-sized bowl, combine the baking mix with milk and stir until just combined. Scoop small spoonfuls of dough into the boiling broth until all the dough is used.
  4. Place and secure the lid on the Instant Pot, cancel Saute mode, and set to Manual mode. Cook for 7 minutes at High Pressure.
  5. When cooking is complete, manually release the pressure or allow it to release naturally. Remove the lid and serve.

Notes

  • Cut dumpling dough into smaller portions for evenly cooked dumplings.
  • Store leftovers in the refrigerator and reheat gently before serving.
  • You can substitute other mixed vegetables or add extra herbs for more flavor.
