Ingredients
1 pound ground turkey
1 pound ground beef
28 ounces tomato sauce
28 ounces diced tomatoes, undrained
2 cups diced green bell pepper
1 cup diced onion
1/4 cup brown sugar
2 teaspoons kosher salt
6 cups beef broth
3/4 cup uncooked rice
Instructions
Set the Instant Pot to Saute. Brown and crumble the ground turkey and ground beef until cooked through. Drain the excess fat.
Add the onion, tomato sauce, diced tomatoes, green bell pepper, brown sugar, kosher salt, beef broth, and rice. Stir well.
Cancel Saute mode and secure the lid. Set the Instant Pot to Manual or High Pressure for 7 minutes.
When cooking is complete, carefully release the pressure manually or allow it to release naturally.
Remove the lid, stir the soup, and serve hot.
Notes
The rice will absorb more broth as the soup rests.
Add extra beef broth when reheating if the soup becomes too thick.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
