These Italian Grinder Sliders combine layers of savory deli meats and melted provolone on buttery Hawaiian rolls with a tangy, crunchy grinder salad topping. They’re an easy, crowd-pleasing appetizer or main dish.

Ingredients

  • 12 pack Hawaiian rolls (sliced horizontally)
  • 8 slices Genoa salami
  • 46 slices deli turkey
  • 12 slices deli pepperoni
  • 68 slices provolone cheese
  • 5 tablespoons butter (melted)
  • 1 teaspoon garlic powder
  • 1 tablespoon parsley
  • 1/21 teaspoon red pepper flakes (optional)
  • ⅓ cup mayonnaise
  • 2 tbsp red wine vinegar (to taste)
  • ⅓ cup grated parmesan cheese
  • ½ teaspoon Italian seasoning
  • 2.53 cups romaine lettuce (finely shredded)
  • ½ cup banana peppers (chopped, plus 12 tablespoons of the juice)
  • ¼ cup red onion (thinly sliced)

Instructions

  1. Preheat the oven to 350°F.
  2. Slice the entire slab of Hawaiian rolls in half horizontally and place the bottom half in a baking dish.
  3. Layer the Genoa salami, turkey, provolone, and pepperoni evenly over the rolls. Replace the top half of the rolls.
  4. In a small bowl, mix the melted butter, garlic powder, parsley, and optional red pepper flakes. Brush generously over the tops of the rolls.
  5. Cover the baking dish with foil and bake for 20 minutes, or until the cheese is melted and the sliders are heated through.
  6. While the sliders bake, prepare the grinder topping. In a large bowl, whisk together the mayonnaise, red wine vinegar, Italian seasoning, 1–2 tablespoons banana pepper juice, and grated parmesan. Taste and adjust the vinegar or seasoning as desired.
  7. Add the shredded romaine, chopped banana peppers, and sliced red onion to the dressing. Toss until evenly coated.
  8. Remove the sliders from the oven and carefully lift off the top buns. Spoon the grinder topping evenly over the warm meat and cheese.
  9. Replace the top buns, slice into 12 individual sliders, and serve immediately.

Notes

  • Add red pepper flakes for extra heat or omit them for milder sliders.
  • Adjust the red wine vinegar and banana pepper juice to taste for a more or less tangy grinder dressing.
  • Add the grinder topping just before serving so the lettuce stays crisp.
  • For leftovers, store the grinder topping separately from the sliders and assemble after reheating.
