These Italian pinwheels are a fresh and flavorful appetizer made with lavash bread, ripe tomatoes, basil, and creamy fresh mozzarella. They are quick to prepare and perfect for parties, lunches, or light snacks.

Ingredients

  • 2 sheets lavash bread
  • 2 large tomatoes, thinly sliced (more or less as needed; beefsteak or other meaty variety)
  • 1 bunch fresh basil leaves, torn
  • 12 oz fresh mozzarella, thinly sliced

Instructions

  1. Place the lavash bread on a clean work surface.
  2. Layer the tomato slices evenly over the bread, leaving a small border at one short end.
  3. Scatter the torn basil leaves evenly over the tomatoes.
  4. Top with the sliced fresh mozzarella.
  5. Starting from the short end, roll the lavash tightly into a log and place it seam-side down.
  6. Cut each roll into four equal pieces.
  7. Secure each pinwheel with a sandwich pick and serve immediately.
  8. If using tortillas instead of lavash, follow the same method, trim the ends for even pieces, and cut each tortilla into 2 to 3 pinwheels depending on its size.

  • Serve immediately for the freshest flavor and texture.
  • Pat tomato slices dry before assembling to prevent the lavash from becoming soggy.
  • For extra flavor, drizzle with balsamic glaze or pesto before rolling.
