Ingredients
1 lb ground beef
1/4 cup parmesan cheese
1/4 cup milk
1/2 cup bread crumbs
1 tbsp garlic powder
1 tsp salt
2 tbsp fresh chopped parsley
1/2 tsp black pepper
2 carrots, sliced
1 medium onion, chopped
3 cloves garlic, minced
2 qts chicken stock
2 bay leaves
1 tsp salt
2 cups baby spinach or escarole
1 cup orzo or acini de pepe
2 tbsp olive oil, divided, to fry meatballs and saute vegetables
Instructions
Combine the ground beef, parmesan cheese, milk, bread crumbs, garlic powder, 1 tsp salt, parsley, and black pepper. Roll the mixture into small meatballs about the size of a quarter.
Add 1 tbsp olive oil to a large pot over medium-high heat. Sear the meatballs for about 30-45 seconds on each side. Transfer the meatballs to a plate and set aside.
Remove the used oil from the pot. Add the remaining 1 tbsp olive oil and heat over medium heat. Add the onion and saute for about 5 minutes, or until it begins to soften.
Add the carrots and saute for another 5 minutes. Stir in the minced garlic and cook for about 1 minute, until fragrant.
Pour in the chicken stock and add the bay leaves and remaining 1 tsp salt. Bring to a boil, then immediately reduce the heat to a simmer.
Return the meatballs to the pot and simmer for 15 minutes.
Stir in the pasta and continue simmering for 10-15 minutes, or until the pasta is al dente.
Remove the pot from the heat. Add the spinach or escarole, cover, and let stand for 3 minutes. Stir the wilted greens into the soup, remove the bay leaves, and serve hot.
Notes
Either baby spinach or escarole works well for the greens.
Use orzo or acini de pepe for the pasta.
Keep the meatballs small so they cook quickly and are easy to eat in the soup.
