Juicy grilled steak with a flavorful crust, seasoned simply with salt, pepper, and a touch of oil for a perfect sear.

Ingredients

  • 2 ribeye or strip steaks (about 1 inch thick)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons butter (optional)
  • 2 cloves garlic, smashed (optional)
  • Fresh herbs like thyme or rosemary (optional)

Instructions

  1. Remove steaks from the refrigerator 20–30 minutes before grilling to bring to room temperature.
  2. Preheat the grill to high heat (about 450–500°F).
  3. Pat steaks dry with paper towels, then rub both sides with olive oil and season generously with salt and pepper.
  4. Place steaks on the hot grill and cook for 3–5 minutes without moving, until a crust forms.
  5. Flip and cook for another 3–5 minutes for medium-rare, adjusting time based on desired doneness.
  6. If using, add butter, garlic, and herbs during the last minute, spooning melted butter over the steaks.
  7. Remove steaks from the grill and let rest for 5 minutes before slicing and serving.

Notes

  • Use a meat thermometer for accuracy: 130°F for medium-rare, 140°F for medium.
  • Letting the steak rest helps retain juices.
  • You can substitute different cuts like filet mignon or sirloin.
  • Avoid flipping the steak multiple times to ensure a good sear.
