This Keto French Onion Chicken combines juicy pan-seared chicken breasts with rich caramelized onions and a savory sherry-infused sauce, all topped with melted mozzarella and gruyere cheese. It’s a comforting low-carb dinner packed with classic French onion flavor.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts (4 total)
  • 4 tablespoons butter, divided
  • 2 medium onions, thinly sliced
  • 1/2 cup cooking sherry
  • 3 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme, plus extra for garnish
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 cup beef or chicken stock
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded gruyere cheese

Instructions

  1. Lightly season the chicken breasts with salt and pepper on both sides. In a large skillet over medium-low heat, melt 2 tablespoons of butter and add the onions and garlic. Cook until the onions are deeply caramelized, about 30 minutes. Remove the onions from the skillet and set aside.
  2. Increase the heat to medium-high and add the remaining 2 tablespoons of butter. Sear the chicken on both sides until deep golden brown. Remove the chicken from the skillet and set aside. The chicken will not be fully cooked at this stage.
  3. Deglaze the skillet with the stock, scraping up any browned bits from the bottom of the pan. Simmer for 3 to 5 minutes.
  4. Reduce the heat to medium-low and stir in the cooking sherry, Worcestershire sauce, thyme, salt, and pepper. Simmer for about 6 minutes, or until the sauce has reduced by half and thickened slightly.
  5. Return the caramelized onions to the skillet and nestle the chicken into the sauce. Simmer for about 10 minutes, or until the chicken reaches an internal temperature of 165°F.
  6. Spoon some onions and sauce over the chicken and top with the mozzarella and gruyere cheeses. Bake at 275°F for 7 to 8 minutes, or until the cheese is melted and bubbly. Garnish with fresh thyme before serving.

Notes

  • For extra flavor, use beef stock instead of chicken stock.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Serve with roasted vegetables or cauliflower mash for a complete keto-friendly meal.
  • Gruyere cheese can be substituted with Swiss cheese if needed.
