Keto Parmesan Zucchini Sticks turn fresh zucchini into a crispy, cheesy side dish or snack with a savory Parmesan and beef crisp topping. A quick finish under the broiler gives them a delicious golden crunch.

Ingredients

  • 8 medium zucchini, sliced in half lengthwise
  • 1 cup grated Parmesan cheese
  • 1 cup finely crushed beef crisps
  • 1/2 tablespoon dried oregano
  • 1/4 teaspoon coarse sea salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Preheat the oven to 350°F. Line a large baking sheet with parchment paper or another oven-safe liner.
  2. Wash and dry the zucchini, then slice each one in half lengthwise. Arrange the zucchini halves cut-side up on the prepared baking sheet.
  3. Add the Parmesan cheese, finely crushed beef crisps, dried oregano, sea salt, and black pepper to a small bowl. Stir until evenly combined.
  4. Sprinkle approximately 1 1/2 to 2 tablespoons of the Parmesan mixture over each zucchini half. Gently press the topping onto the zucchini to help it stay in place.
  5. Bake for 15 minutes. Switch the oven to broil and cook for another 5 to 6 minutes, watching carefully, until the topping is crisp and golden brown.
  6. Remove from the oven and allow to cool briefly. Serve warm with marinara sauce, a creamy vegetable dip, hot sauce, or another low-carb dipping sauce.

  • Dry the zucchini thoroughly before adding the topping to help prevent excess moisture and softness.
  • For extra garlic flavor, mix garlic powder into the Parmesan topping.
