Ingredients
2 tbsp butter
1/2 onion (chopped)
2 tsp minced garlic
3 oz cream cheese (softened)
1/4 tsp paprika
1/2 tsp Italian seasoning
1/2 cup heavy whipping cream
1/2 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
salt and pepper (to taste)
2 large zucchini (sliced thinly)
Instructions
Preheat the oven to 350°F.
Melt the butter in a large oven-safe skillet over medium heat. Add the chopped onion and sauté until soft and translucent.
Stir in the minced garlic, paprika, Italian seasoning, and cream cheese. Season with salt and pepper and stir until the cream cheese melts into a smooth mixture.
Pour in the heavy whipping cream and simmer gently until the sauce begins to thicken.
Add the mozzarella and cheddar cheeses and stir until melted and smooth. Pour the cheese sauce out of the skillet and set aside.
Arrange the thinly sliced zucchini in the same skillet in slightly overlapping concentric circles.
Pour the cheese sauce evenly over the zucchini.
Bake for 20 to 25 minutes, until the sauce is bubbly and golden and the zucchini is tender.
Let rest for 10 minutes before serving.
