Ingredients
1 medium zucchini
1 large egg, beaten
1/3 cup almond flour
4 oz ricotta cheese
3 tbsp grated parmesan cheese
1 tbsp fresh chives, chopped
1 tbsp fresh parsley, chopped
to taste salt and pepper
1–2 tbsp avocado or olive oil
Instructions
Warm a thin layer of avocado or olive oil in a skillet over medium-high heat.
Finely shred the zucchini, then gently squeeze out excess moisture using a clean kitchen towel.
In a mixing bowl, combine the shredded zucchini, beaten egg, almond flour, ricotta cheese, parmesan cheese, chives, parsley, salt, and pepper. Mix until fully combined.
Drop spoonfuls of the batter into the hot skillet and flatten them slightly. Cook for 2 to 3 minutes per side, until golden brown and crispy.
Transfer the cooked fritters to a paper-towel-lined plate to drain excess oil.
Serve warm with Greek yogurt, sour cream, or a favorite low-carb dipping sauce.
