Soft and fluffy keto zucchini muffins made with coconut flour, warm spices, and your choice of crunchy nuts or sugar-free chocolate chips. A satisfying low-carb treat for breakfast or snacking.

Ingredients

  • 2 cups shredded zucchini (about 1 medium zucchini)
  • 2/3 cup coconut flour
  • 1/2 cup brown sugar replacement
  • 1/3 cup unflavored whey protein powder (or egg white protein)
  • 2 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp salt, plus a little for draining the zucchini
  • 1/8 tsp ground cloves
  • 5 large eggs
  • 1/3 cup melted butter (or melted coconut oil)
  • 3 to 4 tbsp water
  • 1/2 cup chopped walnuts, pecans, or sugar-free chocolate chips

Instructions

  1. Place the shredded zucchini in a strainer over the sink, sprinkle lightly with salt, and let it drain for 1 hour. Squeeze out as much excess water as possible using your hands.
  2. Preheat the oven to 350°F and line a 12-cup muffin pan with parchment or silicone liners.
  3. In a large bowl, whisk together the coconut flour, brown sugar replacement, protein powder, baking powder, cinnamon, salt, and cloves.
  4. Stir in the squeezed zucchini, eggs, melted butter, and 3 tablespoons of water. Mix well. If the batter is too thick to scoop easily, add the remaining tablespoon of water. The batter should be thick but not runny.
  5. Fold in the chopped walnuts, pecans, or sugar-free chocolate chips.
  6. Divide the batter evenly among the 12 prepared muffin cups.
  7. Bake for about 25 minutes, or until the tops are golden brown and spring back lightly when touched.
  8. Let the muffins cool in the pan before serving.

Notes

  • Squeezing as much moisture as possible from the zucchini helps keep the muffins fluffy.
  • Use melted coconut oil instead of butter if preferred.
  • Choose walnuts, pecans, or sugar-free chocolate chips for the add-in.
  • Add the final tablespoon of water only if needed to make the batter easy to scoop.
  • Store cooled muffins in an airtight container in the refrigerator.
