Lasagna Soup

A cozy lasagna-inspired soup with a rich tomato broth, tender pasta, savory Italian flavors, and a creamy cheese topping.

Ingredients

  • 1/2 pound ground beef
  • 1/2 pound Italian sausage
  • Salt and freshly ground black pepper, to taste
  • 1 yellow onion, chopped
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 recipe marinara sauce, or about 24 ounces prepared marinara sauce
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons fresh parsley, chopped, or 2 teaspoons dried parsley
  • 1/2 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 7 cups low-sodium chicken broth
  • 9 lasagna noodles, broken into pieces
  • 2 cups fresh spinach leaves, optional
  • 10 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh basil, for serving

Instructions

  1. Heat a large soup pot over medium-high heat. Add the ground beef and Italian sausage, season with salt and pepper, and cook until browned. Drain excess grease and remove the meat from the pot.
  2. Add the olive oil and chopped onion to the pot. Cook over medium heat until softened, then add the garlic and cook briefly until fragrant.
  3. Stir in the tomato paste, marinara sauce, red pepper flakes, parsley, oregano, basil, cooked meat, and chicken broth.
  4. Bring the soup to a boil, then add the broken lasagna noodles. Reduce the heat and simmer until the pasta is tender, stirring occasionally.
  5. Add the spinach, if using, and cook just until wilted. Taste and adjust the seasoning as needed.
  6. In a small bowl, combine the ricotta, mozzarella, and Parmesan cheeses.
  7. Ladle the hot soup into bowls and top each serving with a generous spoonful of the cheese mixture and fresh basil.

Notes

  • For make-ahead soup, cook the pasta separately and add it to individual servings so the noodles do not become overly soft.
  • Add extra broth when reheating if the soup has thickened during storage.
  • Ground turkey or another preferred ground meat can be substituted for the beef and sausage.
  • Store leftovers covered in the refrigerator and reheat gently before serving.
