This creamy Lemon Lasagna is a refreshing no-bake dessert layered with a buttery graham cracker crust, lemon cheesecake filling, lemon pudding, and a fluffy whipped topping. It is a bright and sweet treat perfect for gatherings.

Ingredients

  • 2 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ⅔ cup melted butter
  • 3 oz. lemon jello
  • ⅔ cup boiling water
  • ⅓ cup Greek yogurt or sour cream
  • 16 oz. cream cheese, softened
  • 1 cup powdered sugar
  • 3 Tablespoons lemon juice
  • 1 teaspoon vanilla
  • 2 cups cool whip, thawed
  • 2 x 3.4 oz box of lemon instant pudding
  • 3 cups cold milk
  • 3 cups cool whip, thawed
  • 6 oz. white chocolate bar or block, to make the curls

Instructions

  1. In a medium bowl, stir together graham cracker crumbs and sugar. Add melted butter and stir until all crumbs are evenly moistened.
  2. Press the crust mixture firmly into the bottom of a 9×13-inch dish. Place in the refrigerator or freezer while preparing the filling.
  3. Dissolve lemon Jell-O in boiling water in a small bowl. Set aside to cool to room temperature, or chill briefly in the refrigerator to speed up the process.
  4. In a large mixing bowl, beat softened cream cheese and powdered sugar until smooth. Add Greek yogurt or sour cream, lemon juice, and vanilla, then mix until combined.
  5. Slowly mix the cooled lemon Jell-O into the cream cheese mixture.
  6. Fold in 2 cups thawed Cool Whip until smooth and creamy.
  7. Spread the lemon cheesecake layer evenly over the chilled crust. Refrigerate or freeze briefly to firm up.
  8. Whisk the lemon instant pudding mix with cold milk until it begins to thicken.
  9. Spread the pudding layer evenly over the lemon cheesecake layer.
  10. Spread 3 cups thawed Cool Whip over the pudding layer.
  11. Refrigerate for at least 4 hours, preferably overnight, until completely set.
  12. Before serving, make white chocolate curls by allowing the chocolate bar to soften slightly at room temperature, then shave curls or shavings using a sharp thin knife or vegetable peeler. Sprinkle over the top before slicing.

Notes

  • For best results, chill the dessert overnight so all layers set properly.
  • Greek yogurt can be replaced with sour cream for a slightly richer flavor.
  • Store covered in the refrigerator for up to 4 days.
  • Keep the white chocolate curls chilled until ready to serve for the best appearance.
